is there any particular reason that it seems everyone who makes fps gameplay videos records it without sound and adds weird happy music? (besides the fact that it makes them freakin hilarious!)

Partly because, as you said, it makes them freakin hilarious. Partly because file sizes of recorded video is a lot smaller without audio. And partly because its really boring for people who already play the game to to watch it with the same sounds they've been hearing for years and years.
