@HeavyMetalist24 Not really. When done properly there's quite a bit more of 'alchemy' to it.

Eugh just use a simple sponge cake mix and add a bit of matcha green tea to it! So much simpler
HeavyMetalist24 7 months ago
@kgsaigon1 it's green tea matcha powder, different from the green tea you use to make tea =]
you can probably find some in an asian supermarket or maybe even your regular grocery store.

@jylee2790 What kind of green tea powder is that, it doesn't look like the dark matcha green tea, where i buy my green tea from! Is that perhaps a lighter tasting green tea? Please reply much appreciated!

original/proper japanese castella/kasutera cake is make of:
eggs, milk, sugar, flour, honey.
none of this western cream of tartar, vanilla extract nonsense.

@Babybobgirl If you are sure that there is no egg yolk in your egg whites, and you make sure that there are no traces of fat on your beaters and bowl, then you really won't need the cream of tartar. It's really there to ensure stability of the whites. Also, if you use the white flour (all porpose flour) it will turn out the way it is in the recipe. You could opt for cake flour and adjust accordingly. Hope that helps!

I have a Q: do you HAVE TO put the cream of tartar and does it matter what type of flour I use? Thank you.
