couldn't you incorporate a thermometer to detect and adjust for temperature changes? though I suppose without a really accurate thermometer, it could make it even more unstable.

Good question, Problem is that the temperature outside isn't necessarily the temperature inside the sensor. If I were to take the segwii outside, the outside temperature reading would quickly change, but the sensor internally will take some time transferring heat until it reaches equilibrium. This lag isn't good, and if the temperature was just slightly off the integration would drift. There are gyros out there with internal temperature monitors, that is what I plan to get.

Haven't checked, but it's better to buy online because you have a really wide range of selections, and almost all of those have datasheets which is what is important.

No video yet on it being driven around with a wiimote. The wiimote part is beta for now but I hope to get it going within a week. I'm currently testing on a 3 wheeled bot and it works great (I will post up soon), but moving it over to the segwii will be difficult because without encoders. It is very difficult to move around without encoders, even dealing with unleveled terrain is impossible. I hope to buy new motors with encoders built in very soon.
