There is actually a green elderberry variety that turns into a light shade of green when ready and has the same taste as the purple elderberry. It's not as common as the other varieties you've mentioned, but tends to grow to a much greater hight.
I make a elderberry vinegar every year, and use the flowers in pancakes, or just add the flowers into the elderberry juice for more flavor.

Is there an efficient way of removing the seeds from red elderberries?
Would someone still be poisoned if they juiced the red elderberries using a steam juicer?

@Slightquills The seeds have a form of cyanide in them. They should be consumed in any form. Pulverized seeds are still seeds. The red pulp has to be separated from the seeds.
