Ok. I make about 40 pumpkin rolls each year and the secret to no cracking is take crisco and grease your wax paper...plus add just a little extra pumpkin puree to your cake mixture....plus before you flip it onto the towel...sprinkle the towel with powered sugar....

I think the reason your pumkin roll cracks is because you are letting it cool for 2 hours. I let mine cool for about 1 hour before frosting and I never have cracked pumpkin rolls :)
