Dates and walnuts cake
½ Cup oil
2 cups sugar
3 eggs
1 teaspoon vanilla
1 teaspoon lemon zest
3 cups flour
2 teaspoons Baking Powder
2 teaspoons Baking Soda
½ teaspoon salt
½ cup milk
½ cup apple sauce.
1 cup pitted and cut up dates

Heat up the oven to 200 degrees. Grease your cake pan with oil or shortening
Mix eggs with vanilla and grated lemon zest. Add oil, apple sauce, milk,
Mix sugar, flour, baking powder, baking soda and salt.
Add wet mix to the dry mix.
Stir well. Add to the pan. Bake for 45-55 min.
Check for doneness with toothpick until it comes out dry.
Cool for one hour and then invert into a serving platter

  • Great recipe. Were the dates soaked in hot water/milk to soften them before you added them or is it not necessary to soften them before use ?

  • @irfand4 , Thanks for your comment. The dates were not soaked in anything. they will absorb some of the liquids added to the cake and will soften up when baked...but you have to make sure that you get soft dates for this recipe,makes it better cake.

  • I've always loved this cake when mom prepared for us. Now, ages later LOL, I'd love to make it for hubby and the kids. I know they'd love it, too.

  • Where can I get this apple sauce ?Is it sold ready made in stores or can I prepare at home?Can I prepare the cake without it?

  • @jawad384 , Applesauce is sold at stores but you may make your own at home. i will send you a recipe for that. You can prepare the cake without it but i used it just to add more moisten to the cake. You may also use applesauce instead of oil, using the same amount required for the cake in oil and substitute it with applesauce.
