Heard this argument before. My rationalization behind this plot hole is that even if the Eagles could carry them that far, transportation via air would have put them directly in the sights of the Eye of Sauron which then would have either resulted in either Frodo falling to his doom due to a "psychic bond" attack from the ring or an immediate air assault from dragons or other flying creatures in Mordor's arsenal. Sneaking in was the best route, no matter what.
