@kimseablemyers Hello Kim & thanks for your comment. For me the trick was using quality salt and a nice smokey paprika. I have since fond it quicker & easier to toss the eggplant strips in a bowl until well coated instead of brushing them. Less mess & faster. The result is definitely yummy, but no bacon lover is going to kiss the pig goodbye. With all the fixins on the BLT, I LOVE it.

Angela Stokes-Monarch just made a video this week on making eggplant bacon also. She wasnt sure she liked it. I am glad that your video was a bit more positive in the end result! Thanks!
