So can you even use Happ comp. buttons? I mean, isn't there some sort of work around about that stupid tab/grounding out issue?

A lot of people prefer Happ to Sanwa. I'm one of those people. My modded X-Arcade stick finally works on the XBox 360 otherwise I'd buy the Madcatz stick and mod it.

I don't see why anyone would change out the sanwa parts.. I thought sanwa was supposed to be one of the best arcade parts? why switch it?

Is there really no way to get a Happ stick into a SE box? I'm planning on buying a SE box specifically to mod it for my PS3!

There is no way. The Happ body is as tall as the SE case itself. If you want a Happ joystick, I suggest making your own. It's not really worth the effort to get a Happ into an SE.

It would probably be easier to just put a bat top on the sanwa stick. and then replace the gate with whatever shape you prefer

To elaborate more on this, if you are looking to get a stiffer feel in the joystick along with the bat top, you can use the spring mod where you add an additional spring to the JLF. akihabarashop has a video on youtube that shows you how to do it.

Is there a reason the HAPPs are so long?

HAPP buttons are generally used on american style arcade cabinets. The cabinets have panels that are pretty thick. It usually ranges from 3/4" to 1" so the buttons need to be long.
