can you give a brief translation for the important parts please? I've had ox tongue sashimi several times and I really like it. I wanna try to make it myself. I found a huge ox tongue in a Korean supermarket near my place and it requires cutting out those parts like you did. Thanks

You say you also eat it raw... Is that straight after (or shortly after) slaughter or do you leave the meat in a cool place first before eating it? And which sauce do you use (if any)?

Thank you very much for posting. I recently had Japanese style Gyutan and it is my favorite. I'm trying to recreate this at home.
Your method is different from the Mexican style of boiling to remove the skin as mentioned here. What do you think is the short coming on flavor when boiling to remove skin? I'm sure there is a reason to go through so much effort.
