This is honestly the best Chile Relleno recipe I have ever come across. I altered the original version and came up with this amazing recipe that will not leave you starving. The price of making 8 chile rellenos or more is equal to probably buying 1 in a restaurant...so recipe will leave you and your wallet full.

Ingredients - 8 poblano chile peppers, charred and peeled - 1/2 to 1 pound Monterey Jack cheese - 1 cup milk - 1 cup all-purpose flour - 1 egg, beaten - 1 teaspoon baking powder - 1 teaspoon baking soda - 1 teaspoon salt - 1 teaspoon vegetable oil - 1/2 cup all-purpose flour for coating - Vegetable oil for frying
* Chile Verde sauce or red sauce for topping.

Directions
1) Char and peel the peppers.
2) Cube the cheese.
3) Beat eggs in separate bowl then mix flour, baking powder, baking soda, salt, and vegetable oil in another bowl. Add beaten egg to mix.
4) Heat oil in a pan for frying.
5) Stuff the poblano chiles with cheese.
6) Roll stuff chiles in flour then into the batter.
7) Put chiles in frying oil and fry until golden brown.
8) Serve with Chile Rellenos with chile verde sauce.

  • How much oil do you fry the chilis in? like an inch or so of oil?

  • @clmosk I usually just use an inch or so of oil. Just enough so that it is partially submerged in it.
