At first I was like "Sexy valentine strawberrys without dark chocolate.. pff impossible".. But I have to admit that sure is one sexy dish.. Just one question, doesn't the hardened sugar interfere with the otherwise soft and gooey texture of the rest of the dish?

Alright.
You forgot something.
You have to have some sort of liquid in the sugar to have it melt down to Carmel. AKA Candy Stage.
You must have some cream or milk but cream is the better option since it is thicker. YOU MUST HAVE CREAM OR MILK IN THE SUGAR FOR IT TO MELT!!!
