3 large eggs
1 pkg Splenda
dash of salt
tsp of soy flour
pinch of cream of tartar
3 ounces cream cheese (not Tbsp!) Do not soften!
and a spoon full of ricotta cheese

Preheat oven to 300 degrees.

Separate the eggs and add Splenda, salt, and cream cheese to the yolks. Use a mixer to combine the ingredients together. In a separate bowl, whip egg whites and cream of tartar until stiff (if you're using the same mixer, mix the whites first and then the yolk mixture). Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites. Spray a cookie sheet with non-stick spray and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly.

Bake about 50 minutes (You want them slightly softer, not crumbly put them in for less time 30 mins). Let cool on the sheet for a few minutes, and then remove to a rack and allow them to cool. Store them in a bread sack or a ziplock bag to keep them from drying out.

Makes 6 about 85 calories a piece, 2 carb per

  • I tired makin this today and it tasted eggy its it suppose to taste like egg yolk?

  • i am a little confused. You set the timer to 55 minutes, and the recipe says 30 minutes. Which one is it?

  • @xcessdenied i tripled it so i put it in longer

  • @xcessdenied i like to put them in for a longer time to make sure they are all completely done and i make em' bigger than the recipe calls for

  • @ladybugsing Not every diet is for every person; It's sad that your body doesn't respond well to Atkins, but that doesn't mean that Atkins is bad for everyone. I hope you're feeling better, and that you've found a diet that works for you.

  • Adkins diet is dangerous, I'm still recovering from high levels of bad cholesterol....and a very dangerous level of good cholesterol....people DO NOT DO THIS NASTY DIET.

  • @ladybugsing A low carb diet without fat is destined for failure. Fats and carbs can replace eat other, to a degree. Without one or the other, you'll end up suffering from protein poisoning.

    The whole idea that the Atkins diet contains an "extreme" amount of fat comes from the lipid hypothesis, which, believe it or not, has never been proven. Tom Naughton does a great job of explaining it in the youtube video "Big Fat Lies."

  • I'm thinking about doing a lower carb diet without the extreme amount of fat in the Atkins diet.

    Can you make them again for the you tube viewers using a single batch they seem very interesting. How do they taste? What are they? Bread or pastry?

    I'm experimenting cooking with eggs this week and learned how to make a really good poached egg. Thank you for posting this video.
