We all know that strawberries are healthy -- they're rich in vitamin C and cancer-fighting antioxidants. But how do you bake a cake with batter that's also healthy? In this Recipe Video from Veria Living, one of Kelly's many secrets is that she doesn't use butter. Instead, she mixes omega 3 eggs with grape seed oil, water, and rice milk, and then beats them until the mixture gets frosting. Once she's added in her sugar-free, gluten-free flour mix, she has a nutritious cake worthy of a strawberry, and safe for every diet. Hint: For a beautiful pink frosting, all you need are two cups of cream, two tablespoons of agave, and one tablespoon of strawberry powder.

Strawberry Cake Ingredients: For cake: 1/2 cup gluten-free flour 3/4 cup potato starch 3/4 cup tapioca starch 3 teaspoons Stevia Plus powder 2 teaspoons baking powder 1 teaspoon baking soda 2 teaspoons xanthan gum 1/2 teaspoon salt 3 large organic Omega-3 eggs 1/4 cup grape seed oil 3 tablespoons water 3/4 cup Swerve sugar substitute (available at natural foods stores and online) 3/4 cup vanilla rice milk 1 tablespoon vanilla extract 3 droppers vanilla cream liquid stevia 3 tablespoons strawberry powder (available at natural foods stores and online) 1 cup thinly sliced strawberries 1 tablespoon light agave nectar For frosting: 1 cup heavy cream 2 tablespoons light agave nectar 1 tablespoon strawberry powder 2 cups strawberries, sliced and fanned for decorating

  • i have a question, when i made my first strawberry cake from scrath (im 17) the gelatin made the cake have an oddd taste in the mouth as if there were pieces of hard jelly in the cake. why is that? and is the gelatin nessesary?
