Potatoes Au Gratin is a favorite around the holidays so I decided to try my hand at making a Cauliflower Au Gratin version that will still pack a whole lot of yumminess but be a lot more figure friendly in terms of both carbs and fat. The final result...success!

INGREDIENTS


Cauliflower 24 oz

Onion 1 Cup

Quinoa Flour 3 TBL

Almond Milk 2 Cups

Lite Butter 2 TBL

Lite Shredded Cheese 1 1/2 Cups

Olive Oil Spray

Salt 2 TSP

Sweet Paprika 2 TSP

Pepper 2 TSP

RECIPE


Spray down a skillet with Olive Oil Spray and saute your Onions until translucent.

Chop up any big pieces of Cauliflower. You want all your Cauliflower to be about the same size
so it will cook evenly.

In a sauce pan melt your Butter and then add your Quinoa Flour and mix together to combine.

Stir in your Almond Milk and allow to thicken.

Add your Salt, Pepper and Sweet Paprika.

Now you can stir in your Cheese and allow to melt down for about 1 to 2 minutes.

Once your sauce is done you can now start getting together your Au Gratin.

In a casserole dish that has been liberally sprayed down with Olive Oil Spray
place down a layer of Cauliflower, then a layer of Onions and finally a layer
of your Cheese Sauce. Repeat until you have used up your ingredients.
Make sure your Cheese Sauce is the last layer on top.

Sprinkle the top with a little more Sweet Paprika.

Cover and Bake in a 375 degree oven for approximately 1 hour making sure to mix your Au Gratin
every 15 minutes. Your Au Gratin will be ready when your Cauliflower is tender.

Allow to sit for about 15 minutes before serving. Enjoy!
