Whenever I needed to make it, I go to a butcher shop and get chicken fat from them. ^_^ If you have any nice butcher shops near you it might be a nice idea to give them a call.

The word for the fried skin and onions ... is pronounced ... grih-bin-ez [ˈɡribənəs]
Translation: "scraps"
Schmaltz ... not just for frying latkes ... also great for making chopped liver ,,, and a "must have" for making matzo balls.
