  • after adding the 2nd cup of sugar, bring the temperature up to only 230 deg. This will give you the syrup your looking for. 240 is in the the fudge stage, and will give you harder candy. Your not going to loose anything, as the real work of the process is the first cooking to 290. 230 will be much easier to pour in your batch!
