Can I Use an 18% Gray Card Instead of White for White Balance?

When I first started I was always confused by this question: "Can I use an 18% gray card instead of a white card for my white balance. They call it white balance and not gray balance so I always felt like I should use white.
But over time since I was using the gray side for proper exposure I started using it for white balance as well and getting good results.
In the video I show a third method as well.

Hello Dave,
Watching this video of yours reminded me of how bad I need Magic Lantern for my 550D..
but - forgive me for the french words - I'M SCARED SHITLESS of destroying my DSLR.
Please, tell me honestly - how many chances do I have to mess my 550D up while trying to install the firmware?

Either way ...if you are taking studio pics, any different color objects that you potograph. change the white balance even at 18% grey.
