咕咾肉(10人份) Vegetarian Protein with Broccoli (Serves 10)




材料Ingredients:

乾素肉塊Dried Vegetarian Protein 80公克(g)

綠花椰菜Broccoli 150公克(g)

紅蘿蔔絲Shredded Carrots 60公克(g)

調味料Seasonings:

鹽Salt 1/4茶匙(Tsp)

醬油Soy Sauce 40cc

糖Sugar 1茶匙(Tsp)

天然味素Vegetable Seasonings 1又1/2茶匙(Tsp)

白胡椒粉Pepper Powder 1/4茶匙(Tsp)

花椒粉Paprika Powder 1/4茶匙(Tsp)

孜然粉Cumin Powder 1/4茶匙(Tsp)

水Water 200cc

油Oil 3大匙(Tbsp)

炸油Oil for deep frying 適量Appropriate amount

作法Preparation:

1. 乾素肉塊用水泡軟 (約10分鐘),擠乾水分,油炸至金黃色備用。1. Soak dried vegetarian protein in water until soft (about 10 minutes), squeeze out the water, deep fry until golden. Set aside.

2. 綠花椰菜及紅蘿蔔絲用滾水加鹽燙熟備用。2. Poach broccoli and shredded carrots in boiling water with salt added. Set aside.

3. 熱鍋放油以小火先將白胡椒粉、花椒粉、孜然粉略炒香,再加入剩餘調味料煮至香味散出,倒入水。中火煮滾後,再加入炸好的素肉塊以小火燜入味。 3. Heat up a pan, turn the heat to low, add oil then white pepper, paprika, and cumin powders until the fragrance can be smelled. Add the rest of the seasonings until you can smell all the seasonings. Add water, turn the heat to medium until boil. Then add the vegetarian protein previously set aside, turn the heat to low until flavor is absorbed by vegetarian protein.

4. 加入綠花椰菜及紅蘿蔔絲拌炒均勻即可起鍋。4. Add broccoli and shredded carrots from step 2. Mix evenly, then it's ready to serve..




※備註:這道菜也可勾薄芡。Note: Flour mixed with water can also be added at the end for a different taste
