Xi' an Noodle Maker

On our October 07 trip to China, we stopped in Xi'an to have lunch after we saw the Terra Cotta army (Very cool). This little guy was making noodles. Very good BTW

Is he using something like a potatoe peeler on a loaf of stiff dough? I find this most interesting.

I feel one of the easiest way to get to know a people is to eat their food. The geography, economics and history of a culture is often reflected in what they eat and how it is made.

I agree 100% with you. I love to travel, eat and learn the various cultures. This was a great experience. I know he was there to entertain the tourists but still fun...

Think he was using a small knife.. even more impressive.

Cool AND delicious! I bet Tony has seen his share of noodles made this way.Very good. This was after a great day seeing the Terra Cotta Warriors... Incredible.

@lukebccb That's right! That's why I don't go eat out because that's exactly how I feel about those places. It's better to cook for yourself. Besides, the noodle I cook at home is so much better.

In the mean time I think it is imperative YOU stay in a SUPER CLEAN laboratory.
