It's amazing how limited their resources were. The space scenes are all basically a big blackness with a big ship in the middle of it. To show many ships they had to crowd them one on top of the other. The result is pretty ugly, but I don't know if they could have made better back then.

During the Dominion war, weapons had the advantage over shields/armor and sensors had the advantage over cloaks, the dominion had shown the ability to pierce cloaks and punch through shields

Not to mention in the previous episode it was noted much of the fleet was having problems with their warp drives

Actually at this point in the war shields were not that effective, the Dominion was very skilled at beating Federation shields

Probably a lot of Galaxy class ships got torn apart in the seventh fleet when it was shattered early in the war.

No actually his plan made sense under the situation
The enemy fleet outnumbered them 2 to 1 and they have less than a few hours to get to the station before the minefield came down, thousands of Dominion ships were waiting to pour through the wormhole.
Of course he threw every ship into the gap, they didn't time to fight a battle of attrition, they had to get through ASAP. The hope was at least one ship would get through.
And it worked.
