Tables laid out like a huge trough, the chef spills out bushell baskets of food like sloping the hogs. Crawfish, chicken, ham, smoked sausage, russet potatos, corn on the cob. Between rounds they partially scrape the table and the cook takes what looks like a laundry basket of head-on barbequed chickens and tosses the contents down the length of the table in a move that is reminiscent of turkey bowling after hours in a supermarket. The carcases are then picked apart by the masses. Note the lack of napkins or plates....
