Hot chocolate fondants, recipe by Gordon Ramsey.
Serves 4
These chocolate fondants are a real crowd-pleaser decadent, and satisfying. Make them in advance and chill the mixture in individual ramekins. They will need another 1-2 minutes in the oven if baking from cold.
50g unsalted butter, plus extra softened butter to grease
2 tsp cocoa powder, to dust
50g good-quality dark chocolate (minimum 70 per cent cocoa solids)
1 large egg
1 large egg yolk
60g caster sugar
2 tbsp Tia Maria
50g plain flour, sifted
1 Preheat the oven to 160C/Gas 3. Butter four ramekins and dust with cocoa powder. Melt the butter and chocolate in a small, heatproof bowl set over a pan of barely simmering water, stirring continuously until smooth.
2 Using an electric whisk, beat the egg, egg yolk and sugar together until pale and thick. Gradually add the chocolate mixture. Fold in the Tia Maria, followed by the flour.
3 Divide the mixture between the prepared ramekins, place in the oven and bake for 12 minutes. The sides should have set but the centre should be soft and slightly molten. Serve immediately, with vanilla ice cream on the side.
