Stainless steel does NOT heat up evenly or quickly. If a stainless steel pot or pan heats up quickly, it's due to the aluminum or copper cladded or impacted in the stainless steel. And getting the carbon layer to add to the mystique of the iron? That makes no sense. He should've said that it's to season the metal which gives it nonstick properties and keeps it from rusting. He says he's a chef but half the time he hasn't got a clue what he's talking about.
