I had read that the sound was heavily "spruced-up" afterwards, but wow, they must have almost re-recorded the whole thing. Did the sound really drop out like that on the middle of Help?

Only on the master soundboard recording from the Shea PA system. This song, along with other songs from this concert, was rerecorded in a studio later.
