Acid-Base Reaction: Vinegar & Baking Soda
Vinegar is very acidic and baking soda is very basic. This reaction between the vinegar and baking soda is an example of a multi-step reaction, there are two reactions taking place. The acetic acid, in vinegar, reactions with sodium bicarbonate, in backing soda, to form carbonic acid, which is a double replacement reaction. Carbonic acid in unstable which means it does not stay in its form for long and breaks down into component parts. So the carbonic acid immediately falls apart into carbon dioxide and water, which is a decomposition reaction. The bubbles are a result of the carbon dioxide escaping the solution that is left. What's left is a dilute solution of sodium acetate in water. This is an endothermic reaction.
