Here's my recipe: 1 1/2 c flour, 1 tsp baking soda, 1 tsp baking powder, 1/4-1/2 tsp cinnamon, 1/2 tsp salt, 3/4 c sugar, 2 large eggs, beaten, 1/2 c vegetable oil, 1 tsp vanilla, 1 1/2 c total of grated carrot and apple, 1 1/2 c total chopped nuts, raisins, dried cranberry and crystallized ginger. 350ºF oven for about 45 min.

Since I saw this video last week, I have made four loaves of this harvest bread. It is wonderful! Two loaves went to my nephew in boot camp and the other two were eaten as they came out of the oven. Tomorrow I'm making two more loaves.
yeah gluten free!!!!!! I have celiacs so this was awesome to find. I know I can improvise with the GF flour but... I buy the ready made flour but would love to know what is in your flour. The store bought is so expensive. BB)O(
