You're probably some 4th generation descendant of a couple chumps from Hong Kong who knows specks of Cantonese or a Vietnamese poser. You clearly don't even know what 普通话

Chinese actually mean people who originate from China or were from a Chinese descent. Mandarin refers to the language. And this version is the "chinese" used by most "chinese" speaking regions. Any other "chinese" is probably dialect, and so far I have only seen cantonese (a dialect) dubs, so this should be the general "chinese".

I never watched Tamers in Chinese version, only Adventures 1 and 2. I have to say, the Adventures seasons in Chinese and Japanese are both good. This one is not bad either, except Ruki, her voice is more suitable in Japanese.

You can't exactly watch it. So far, you can only get the chinese episodes by buying the DVD box set in China.
