Take Carbon Dioxide, reduce it's temperature to -79 degrees C, now you have dry ice.

Then how do you freeze the carbon dioxide?

There are many ways to make it professionally. Personally if you can get hold of a Carbon Dioxide fire extinguisher place a cloth bag of sorts around the nozzle (wear gloves) and empty the contents. The gas will expand rapidly and cool, the solidified CO2 "should" from inside the bag.
