You can go for at least an hour with your onions on a low, low heat until they become a dark brown gloop. You know they aren't singed or burned because they caramelise from the inside out, I put a teaspoon of mustard seeds and a sprig of fresh Rosemary aswell as a Bay leaf in with mine if it's for Bangers & Mash (only when the sausages are amazing) and use beer to add to the stock. I will try the arrowroot I usually just use plain flour.
