To brine does the container need to be plastic or is a metal stock pot ok?

Hi. You need to make sure it is a non-reactive container. A plastic bin is great, or Stainless Steel, NOT Aluminum. They also sell Really Big Ziplock bags at Walmart, not in the section where food wrap is. Look at my Maple Sugar Bacon Video, as I show the bag and packaging. Cheers, and Happy Smoking!

@KarabelnikCookies - Trust me, Try this one. It has never been the slightest bit too salty. There are only 1-1/2 cups of salt to 2 gallons of water.
