Wonderful video! I brought home a wild boar leg from my local farmer's market and now I know just how to get it to fit in my smoker, first of all; can't wait to start cutting. Julia your cutting style leaves to think that your not all that confident when handeling a knife.I have been in the business for over 31 years here in the UK.I would like to swap idaes with you in regards to cutting styles that very in the UK and europe to the USA.If you would be interested please message me back i would love to talk to you and maybe we could share some ideas if yo are willing.
