Welcome to the first installment of "Jevon's Got Skillz."This will be an online cooking channel where I will try and teach you about dishes you may or may not be familiar with.

In case you're wondering what I know about this style of mexican cooking, I've been in tucson,az. for about 6 years and within that time, I have made it a point to learn about the local culture and cuisine. During this time, i have come across some great mexican dishes and have learned as much as I could about them. I encourage you to do the same, it's always good to get familiar with what you're eating and who you interact with.

A little background on this dish:
The residents/natives of the city of Culiacan in the state of Sinaloa (about 1/2 million inhabitants) call themselves "culichi". "Culichi" on a U.S. menu item simply means prepared "Culiacan style." You can use shrimp or fish in this recipe. If you are ever in Tucson,Az. go order this dish at Mariscos Chihuahua, they have the best I've had in town.

Here's the basic recipe:

Shrimp Culichi
5 Poblano peppers
1 cup milk
1 can of media cream or sour cream(8 oz.)
3 tbs of chicken bouillon, powdered
1/2 white onion
3 garlic cloves

Method:

Season seafood with salt and pepper, cook through.

Next, roast poblanos until the skin is blistered(black spots).

Place in either a brown paper bag, plastic bag or bowl covered with plastic wrap and let steam for 10 minutes.

Remove from bag or bowl and peel blackened skin off of poblanos and remove the stems & seeds.

Add all ingredients in a blender or food processor and liquefy until smooth.

Pour over seafood, place under broiler and heat until cheese is bubbly and caramelized.
