@AKAGl note that curing and storing are entirely different. We cure at 85% humidity between 70 and 80 degrees for roughly 7 days then store at 65ish degrees 85-90% humidity. We have no problem storing for a year below 65F.

We here in South FL let our sweet potato vines keep producing
year-round. We add slips as I grow 'em from chunks of sweet potatoes
soaked in water. They make huge slips off a little chunk in a can.
We turn over shovelfuls of earth to get sweet potatoes for
curing & add a few new slips and some rich compost then.
Its amazing the life sweet potatoes have in 'em! One time I harvested
the crop, then covered 'em up completely with compost. In a few
days the vines poked thru & started again!
You guys are going to have alot of potatoes to eat. I live in MD, do you think I will have a problem growing them? thanks.

What are you going to do with all of those sweet potatoes? They only keep for around 6 months or so, so if you're not distributing them to others, you're going to have sweet potato madness.

Actually, when they are properly seasoned following harvest, they will keep for a year or so. In our case they kept for a year and in the process we fed a lot of people. The Lord is good.

Check George Washing Carver "How to cure sweet potatoes" on Google. Also, check the same question to Mississippi agriculture and you'll find very good suggestions.
