Can a dremel disk cut through nails? I have some nails sticking out of piece of wood that I can't pull with a hammer, so my only choice is to try to cut them.

there are 2 ways to overcome this little problem. Either use the CARBON cutting disk... wich will break easily. Or you can use a grindstone wheel. I prefer using the grindstone, personaly

How do you cut the plastic without melting it?
Even at the lowest speed ( 8000rpm ) I always melt the plastic.

its all about tapping into it and not full on cutting it .... if that makes any sense ... I use small back and forth motions to make tiny cuts .... pluss these disks really help out alot ... you got any work I can see ?
