Rumor is Butch Coolidge keyed it after their run-in at the bar.

I have two objections to this theory.

1. Butch is not the type that keys cars.

2. Vincent talk like he has no clue who did it, but if Butch did it outside the club, Vincent must have had a very strong suspicion toward Butch, and would not have rested before having it out with him.

3. Butch has been carefully setting up the scam of a lifetime at Marcellus' expense. Would he risk upsetting it all for the sake of keying some jerk's car? Don't think so.

The red impala was stolen from quentins house after filming and was FINALLY recovered recently.

This scene is the essence of Pulp Fiction. Laws and morals/ethics are not the same. Yeah, dealing with drugs for money is against the law, whatever, that's one thing. But keying another man's vehichle... maaaaan, that is another. Much worse in a moral way, if you really think about it. YOU JUST DON'T DO IT.
