I think his playing here is from a tutorial CD, so it's understandable that it's fairly straightforward and almost boring.
If you listen to him playing with Flook, it's a lot better.

which type of whistle uses brian? Is that a chieftain?

He primarily uses Overton whistles which, I believe, is what he's using there. Though, on occasion, he does use Kerry whistles.
