Hey man, thanks for NOT being an annoying purist about Indian food. Fundamentally its all about whether the food tastes good, right? I know Indian Uncles and Aunties who would trip balls about using balsamic vinegar, but honestly who cares. Its important to try to show regular folks a way to make GOOD Indian food without being intimidating with exotic ingredients.

Question! why do u use aesofetida in almost all ur dishes? I have it on my shelf but i do not know what addional flavour does it add as we use so little of it.

@chefvalente where does it say goan curry? it's a chickpea curry - there are thousands of recipes on cooking chickpeas, here's one of them.
