Southwest Brown Rice and Black Bean Burgers
2 cups Thrive rice, cooked
1 1/2 cups cooked black beans, drained {see recipe below}
1 teaspoon chili powder
1/2 teaspoon cumin
3/4 teaspoon salt
2 cloves garlic, minced
1/3 cup chopped onion
2 tablespoons chopped cilantro
1/2 can green chilies
2-ish tablespoons canned Chipotle Peppers in Adobo sauce {PS, they're spicy!}
1/4 cup salsa
1 egg
1/4 cup to 1/2 cup Thrive flour
2 tablespoons olive oil
slices or grated cheese {if desired}
Mix rice, beans, chili powder, cumin, salt, garlic, onion, cilantro, chilies, chipotle peppers, salsa, and egg white in large bowl.
Mixture will be very moist.
Add flour, using only enough so that you can shape the mixture into patties. Dust the outside of the patties lightly with flour.
Heat a medium skillet over medium high heat. Add olive oil and warm.
Add patties and cook until nicely browned, about 3-4 minutes per side.
Top with cheese, reduce heat to low and cover with lid to melt cheese.
Serve with guacamole, sour cream, and salsa if desired
Delicious Thrive Black Beans
Black Beans
2 Slices Bacon
1 Minced onion
2 cloves minced garlic
Salt!
Wrinse and sort beans {okay, to be honest, I'm REAL lax about this part...}
In a large pot or dutch oven, cover beans with water. Soak overnight or quicksoak by heating beans until boiling, then let sit for an hour or two
Drain beans and cover with fresh water
Add bacon, onion, salt, and garlic
Simmer over medium low heat for a few hours, until beans are tender. Season to taste.
what makes u think that vegetarians are gonna use Bacon???
