the thermostat is adjustable and you should set each to about 140-150 and process your substrate for 2 hours. some tweaking may be needed to make sure your obtaining the desired temperature.

the water heater element is 220 volts. Not sure what the wattage is, and there are 2 of them. One on each end of the barrel. You can get a replacement kit at your building store or hardware store. you want the one that has 2 elements and a thermostat. It will have the wiring diagram with it.
