Dave from Chicago's excellent Paulina Meat Market (3501 N. Lincoln Ave.), explains what makes leaf lard different than regular lard and some of its uses. I have searched high and low for it in Chicago, and now I have found it. It makes for a flaky pie crust, but can also be used for tamales, refried beans. It has a milder flavor than regular lard.
