We could not resist...
after visiting one of our big time favorite restaurants in town, Giorgio Baldi, we decided to replicate the memorable risotto that we were served.

    Sweethearts, never cook the shrimps so long, they get all flaky and overcooked. Add them to the rice at the very last moment (once the risotto is almost ready) and cook them for just two minutes or fry them before as you did here, remove from the fire and then add them at the very end once the risotto is thoroughly cooked. Their texture will be much better. :) Ciao!
