why gesso if i want to see canvass texture?

gesso prepares the canvas by smoothing the surface so that the paint glides across without having white holes peaking through. Also gesso can create texture. Typically you don't want to add water. Also its best when applying gesso you go across, dry, sand in the roughest sandpaper in circular motions. Apply up & down, dry, sand in a grade lower in circular motion. Apply upper right corner to low left, dry sand in grade less. Apply upper left to low right & sand in the softest grade

Do you have to add a bit of water to the gesso though? you don't just open it and use it right?
