The way of making the maida roti is identical to making Malabari Parantha and it requires a lot of skill. I tried it myself ( I mean Parantha ) after seeing it on TV, but so far I am still trying. Thanks for the wonderful information and the nice clip.

Shahi Chooley. It is said that Badshah Akbar one day was roaming in the streets of Lahore and he saw a mochi getting ready to eat. When the mochi saw the Badshah he invited him to join in food in a Lahori tradition. He presented the Badshah with Chooley and Nan. That was the tastiest thing Akbar had ever eaten. He said to himself that I am a king and a mochi eats better food than me. He ordered his cooks to cook mochi's chooley and since then they are called Shahi Chooley.

You are wrong when you say that this is what Pakistani people call Katlamma. This "Katlamma" exists only in Lahore.
Everywhere else in Pakistan, ranging from Faisalabad to Sahiwal to Bahawalpur and even all the way to Karachi, a Katlamma is something else. That something else is called "Kimmay wali Tikki" by Lahoris. It is a larger size of a Kichauri.

Wow looks like huge fried dough that we have here as fair celebration food, served with powdered sugar or honey with cinnamon on it. Yummy! Nothing better than fried bread dough!
