Humboldt Smoked Chipotle Baby Back Ribs

Ingredients
2 - racks baby back pork ribs
1 -- 10oz. jar blackberry chipotle sauce
dry seasoning of choice
2 -- cups cherry wood chips

Directions (14"-16" dutch oven)
Soak wood chips in water for 30 minutes.
Place single layer of briquettes inside dutch oven.
Place soaked wood chips over briquettes and insert elevated grill into oven.
Cut each rack of ribs in half and place on grill leaving air gaps to provide oxygen to briquettes.
Allow at least 1 hr. smoking time turning ribs once.
Place another oven upside down over grill, acting as a dome to retain smoke, making sure not to cut off oxygen supply. (optional)
Remove rib racks from oven and cut each rack into single ribs.
Discard briquettes form inside of oven and place trivet inside oven.
Place single ribs onto trivet and bake for 30 minutes, using one ring of briquettes under oven and one ring on lid.
Brush chipotle sauce over ribs and bake for 15 minutes.
Turn ribs, brush remaining side with sauce and bake for 15 minutes.
Remove ribs from oven and ENJOY!!!

  • I enjoy the videos, but I am a little confused as to why this method would be any better than cooking those babybacks on a traditional weber type grill using indirect heating? I assume this is more steaming than smoking/grilling?

    Anyway, great vids! Keep em coming.

  • @jwlrymkr The point of this video is to show how versatile the dutch oven is... I love smoked & barbequed foods and use several different types. Folks may tend to shy away from using dutch ovens, thinking they'd have to give up that great smoked taste... Not true.

  • Good video but u really could do thta with just a small $10 grill or a pot from the house the thing about a dutch oven is really the way u can seal it up with the top and add coals on the top

  • @sethzky77 So it doesn't rust, but also so it gains a non-stick surface which is equal to or superior to any teflon surface.

  • Looked ok, didn't look as thought you removed the membrane on the back of the ribs though. This is a must to get some perfect ribs. The membrane, if left on, prevents smoke fully penetrating the meat.
