Yeah. Shoot your grapple gun at him and drag him towards you with a knife ready to slit or something :)

It's impossible to kill him, your bullets just go through him (trust me, I've tried), but I was just suggesting... or, on that bit where there's loads of gonados and you're with Leon, just offer him up as food while you scarper!
