Aren't you going to post any more videos? You have such a talent, and way with the camera. Please post other videos about using the meats you butcher, or curing same. This is a lost art here in the US. Maybe you'll inspire a young person to keep the tradition alive. Well, thanks for this video anyway.

I'm a bigger fan of the deluxe hams, but anyway ever try either a fresh or cured and smoked sausage spices with maple and cloves? Trust me the two flavors go good together. You just have to be careful with the cloves. The will overpower almost any thing.

Reminds me of my uncle's Ilkley pie recipe, he used make them for Thirkels. Before he died he trusted me with his book of recipes!
