Manny is preparing this side of Berkshire pork from my buddy Tommy Searcey. He's cutting it so I can roll the whole loin and belly together like an Italian Porchetta. We buried the pork roast in salt and roasted it on a real wood fire...it came out really good. Dont worry the whole pig was used as well as goat,lamb,chicken,beef,crab,you name it!
