  • This is beauf bourguignon???? you have to cook it for almost 4 hours in the oven!!!!!!!!!!!!!!!! And, of course, the mushrooms have to be put in the pot barely at the end!!!!!!!!!

  • I think what makes Julia's so good is that the onions are browned and braised and the mushrooms are sauteed first before the final cooking. She also adds beurre manié to make the sauce thick enough to coat a spoon.

  • i dont believe in Julia's recipe as the wine guys say this is not a sophisticated french cuisine long as its got beef, wine, shallots, bacon fat, bouquet garni...its boeuf bourguignon

  • Believe it or not Julia Child did not invent this dish. It's old school common french cooking. it was created to make less desired cut's of beef more tender and tasty. Ever since Julia Child though it has some how become considered a fancy dish... it's really just beef stew with wine and a lot of fats. pork fat, beef fat, and of course, butter. just cause you cook something for 3 hours doesn't make it gourmet, it just makes it easier to chew. lol

  • I have to agree: Julia Child's recipe will make a better tasting bourguignon and no more trouble in the bargain.

  • Instead of wine, you can put some beer and gingerbread.

    That feigns the taste of the wine and the meat is softer.

    (sorry for my bad english^^).
