OK, so here's what's missing due to equipment failure (flip cam freeze!): The clams on this pizza are very fresh and tender and I felt it needed a sprinkling of salt as well as chili flake...
It was unique and tasty and, really, who can manage that combo? Do clams on pizza sound good?
I'm realizing, while editing these episodes, that there is actually a degree of craveable for me- when I watch Din Tai Fung, my mouth waters! Same with the upcoming Kyo-chon episode. While the clam pizza at Bottega Louie is exceptional, I wanted the clams to have more of a pungent white wine, garlic and herb flavor to cut through the mildness of the dough and cheese.
I'm learning that my craveable palate is, more often than not, defined by tang, salt and heavy or unique seasoning (which is code for hot pepper!!).
